What are some interesting Herbs/Plants one might find Foraging?
I feel we had a similar question already in the past. If one is going out and foraging herbs, it is most likely to create some sort of potion. I stick to the procedures and mechanics I've already talked about then. There's not much to be added in that regard, I think.
You could of course always add a random table of things to be found per biome or region you are currently in. Kind of like you do with an encounter table. It could range from simple "spices" you could add to your food, or maybe even a surprise encounter, like a Myconid or some constricting vines.
There are also some interesting supplements out there, like Fungi of the Far Realms that gives you a list of different mushrooms and effects you could find. I'm sure you might also find other books talking about different plants and trees.
While these things add a nice details and realism to your world, I find it a bit too much of a hassle and ends up being simulationist in nature. It starts with plants, next thing is different rocks ending in soil composition and insects and the biosphere in general. Or different schools of fish for that fishing mini-game. Suddenly the GM has to be a botanist, geologist or entomologyst. That's too much for me.
I stay on the side of having less overhead and more simplicity. Having a bespoke ecosystem is fun and all, but doesn't come up all too much in my games, with the exception maybe of brewing potions, but that has been covered. So why go into too much detail for things that are never explored. That's just a waste of effort on my part. I'd rather spend that time in doing some fun dungeon instead.
So I'm boring in that regard and you won't find anything special at all.
